Authentic Tomato Salsa

Perfect salsa for any occasion. Tomatoes, bell peppers, onions, and jalapeno peppers highlight this salsa. Flavored with sugar, garlic, salt, cider vinegar, tomato paste, lemon juice and herbs, this is the perfect accompaniment to seafood.
Ingredients -
4 cups chopped Peeled Tomatoes
1 cup Red Pepper
1 cup Green Pepper
2 - 4 Jalapeno Peppers
1 cup chopped Onion
1/3 cup Sugar or to taste
1 clove Garlic, chopped
1 teaspoon Salt
1 1/2 cups Cider Vinegar
1 1/2 cups Tomato Paste
1/3 cup Lemon Juice
Herbs, to taste
 
Preparation:

1. Combine peeled tomatoes, red pepper, green pepper, jalapeno pepper, onion, sugar, garlic, salt, cider vinegar, tomato paste, lemon juice and herbs.

2. Add to saucepan, and cook 45 minutes over low heat.

3. Remove from heat, cool, and store in mason jars.

Storing Tomatoes
You should store tomatoes in a cool place and not in the refrigerator. When tomatoes are less than ripe, place them in a paper bag with an apple.

Handling and Preparing Tomatoes

Remove stems. Rinse tomatoes under cold water. Remove the core around the stem area. Slice tomatoes with a sharp knife.
