Cowboy Salsa

Vegetable salsa goes great with chicken, pork, beef or seafood. Add extra chilies to heat this salsa up even more.
Ingredients -
1 (15 ounces) can Black Eyed Peas
1 (15 ounces) can Black Beans, rinsed and drained
1 (15 ounces) Whole Kernel Corn, drained
1/2 cup Onion, chopped
1/2 cup Green Bell Pepper, chopped
1 (4 ounces) can Diced Green Chiles
1 (14.5 ounces) can Diced Tomatoes, drained
1 cup Italian-Style Salad Dressing
1/2 teaspoon Garlic Salt
 
Preparation:

1. Add black beans, black eyed peas, whole kernel corn, chopped onion and bell pepper, diced jalapeno and tomatoes.

2. Season with garlic salt and Italian salad dressing. Mix to combine.

3. Cover with plastic wrap, or in airtight container and refrigerate overnight.

Tomatoes
2 large tomatoes or 3 medium tomatoes will yield approximately 1 pound of chopped tomatoes. 1 pound of chopped tomatoes will be just over 2 cups.

Boiling Tomatoes

Never cook tomatoes in reactive (aluminum) pans. Use non-reactive pans.
