Fresh Plum Tomato Salsa

Plum tomatoes, green onions and jalapenos highlight this salsa seasoned with cilantro, garlic, olive oil, lime juice, salt and pepper.
Ingredients -
4 large Ripe Plum Tomatoes, cut lengthwise, seeds removed, diced
1/4 cup chopped Scallions
1/4 cup chopped Cilantro (fresh coriander)
1 tablespoon Fresh Oregano
2 cloves Garlic, minced
1 teaspoon minced Jalapeno Pepper, or to taste
1 tablespoon Olive Oil
2 teaspoons Fresh Lime Juice
Salt & Fresh Ground Black Pepper, to taste
 
Preparation:

1. Add diced tomatoes, scallions, cilantro, fresh oregano, garlic, jalapeno pepper, olive oil, fresh lime juice, salt and fresh ground black pepper to medium bowl.

2. Let salsa sit at room temperature for 1 hour and serve.

3. Refrigerate if not using.

Storing Onions
Store onions in a cool, dark place, or if absolutely necessary in the refrigerator. Green onions will not last as long as other varieties and should be used quickly after purchase.

Poblano, Jalapeno, and Serrano Peppers

Poblanos are larger, mildly spicy peppers, perfect for salsas and for roasting. Jalapenos are a bit hotter, and serranos a bit hotter than jalapenos.
