Fresh Salsa

Quick and easy salsa combines garlic with chili peppers, yellow onion, fresh tomatoes. Seasoned with salt. Serve immediately with warm tortilla chips.
Ingredients -
1 clove Garlic, peeled
2 Serrano Peppers (sautéed in butter until dark in color)
5 Jalapeño Peppers
1/4 Yellow Onion
2 pounds Fresh Tomatoes (quartered if fresh)
Salt, to taste
 
Preparation:

1. Turn on food processor.

2. Drop 1 clove garlic, serrano peppers, jalapeno peppers, yellow onion into food processor opening.

3. Open food processor and add tomatoes.

4. Replace food processor lid and pulse to desired consistency.

5. Serve immediately with warm tortilla chips.

Dried Red Hot Pepper Flakes
As a last resort, you can heat up a mild salsa with red pepper flakes. To be effective, allow the salsa to mingle for a awhile and draw out some of the heat from the dry flakes.

When buying peppers for salsas, whether hot or sweet, the skins should be tight and generally shiny. The pepper should look fresh and healthy.
