Grape Tomato Salsa with Sweet Onion, Banana Peppers and Mango

 
Ingredients -

2 Yellow Bell Peppers, seeds removed and diced
1 large Sweet or Vidalia Onion, peeled and diced
4 Yellow Banana Peppers, finely chopped
1/2 bunch Fresh Cilantro, finely chopped
1 pint ripe Yellow Grape Tomatoes, pureed
6 ounces Mango, peeled and then pureed
2 large Garlic Cloves, peeled and pureed
3/4 cup White Wine Vinegar
1/4 cup Fresh Squeezed Lime Juice
1 teaspoon White Pepper
1/4 cup White Sugar
pinch of Salt (optional)

 
Preparation:

1. Add the diced bell and banana peppers to a 4 quart pot.

2. Add the onion.

3. Puree the tomatoes, mango, garlic, cilantro, vinegar, lime juice, salt and pepper in a blender.

4. Add the puree to the pot with the peppers.

5. Bring the mixture to a boil for 20 minutes over medium-high heat.

6. Add the sugar, and simmer for another 10 minutes on reduce heat.

7. Allow to cool and serve with favorite chips or crackers.
