Salsa Cruda

Traditional style salsa made from a combination of tomatoes and tomatillos. Flavored with chilies, onions, cumin and lime juice. Seasoned with sugar, cilantro, black pepper
Ingredients -
2 large Tomatoes, peeled and chopped
4 Tomatillos, husked and chopped
2 Fresh Chilies, seeded and chopped
5 Green Onions, chopped
2 Fresh Jalapeno Peppers, seeded and chopped
1 teaspoon Ground Cumin
1 teaspoon Fresh Lime Juice
1 teaspoon Sugar
1 teaspoon minced Fresh Cilantro
1/2 teaspoon Fresh Ground Black Pepper
1/4 teaspoon Salt
 
Preparation:

1. Combine tomatoes, tomatillos, fresh chilies, green onion, jalapeno peppers, ground cumin, fresh lime juice, sugar, fresh cilantro, fresh ground black pepper, and salt to lidded jars.

2. Refrigerate at least 1 hour for flavors to blend.

3. Store up to 3 weeks.

Fire Roasted Peppers In Jars
If time does not allow, fire roasted peppers in jars can be purchased at most supermarkets and are suitable replacement for oven roasted peppers.

Scallions

Rinse scallions after purchase, wrap in plastic, and store in the crisper of your refrigerator. They will last from 4 days to a week.
