Mild but tangy salsa combines tomatoes, onion, vinegar, and diced chilies. Flavored and seasoned with garlic, salt and pepper.
Ingredients -
6 medium Tomatoes, peeled, or 1-1/2 pints canned Tomatoes, chopped
1 small Onion, finely chopped
1 teaspoon Vinegar
1/4 cup Water
1/2 cup Diced Green Chilies
1 clove Garlic, minced
dash Salt
dash Pepper
Preparation:
1. Add chopped tomatoes, diced green chilies, vinegar, water, chopped onion, minced garlic, salt, and pepper to saucepan.
2. Cook 1 half-hour on low heat, or until onions are translucent.
3. Stir occasionally.

Avocados
Squeeze avocados ever so gently in the supermarket to determine if they are ripe and ready for purchase. They should give just a little bit. Additionally, most ripe avocados skin will have turned from bright green to dull dark green.

For a nice change, use the fresh roasted variety of diced green chilies, or make your own at home. The roasted chilies add a rich smoky flavor that is delicious.
