Tomato Salsa With Chili Pepper, Onion and Garlic

 
Ingredients -

3 cups peeled, cored, chopped Tomatoes
3 cups seeded, chopped long Green Chilies
3/4 cup chopped Onions
1 Jalapeno Pepper, seeded and finely chopped
6 Garlic Cloves, finely chopped
1-1/2 cups Vinegar, white or cider
1/2 teaspoon Ground Cumin
2 teaspoons Oregano Leaves
1-1/2 teaspoons Table Salt

 
Preparation:

1. In a large saucepan, combine the tomatoes, chilies, onions, jalapenos, garlic, vinegar, cumin, oregano and salt.

2. Bring the mixture to a boil, frequently stirring.

3. Reduce the heat and allow to simmer for 15 minutes, occasionally stirring.

4. Pour the mixture into hot pint jars.

5. Top with lids and boil for 15 to 20 minutes.

6. Refrigerate and serve with favorite chips or grilled meat.
